I have planned this meal for days. I picked up something in the supermarket that I never knew existed. Brandy butter! What was that? I read the label: sugar, butter (35%), brandy (11%). Alright, I love alcohol in my food so I grabbed a bottle and went home blissfully. For those who didn’t know (maybe just me) – it is sweet! And the strong taste of brandy gives it a kick.
I know exactly what to do with it. I have chicken thighs in the fridge and over-riped summer veggies just waiting to be chucked in the oven. Sunday came and I got ready. First, I set up my ‘studio’. I had to shoot first before I eat. When that was done, I took out the chicken and the rest of the ingredients. Then the oven and I got busy. The outcome? This must be the best home-cooked meal I’ve had in a very long time!
