Chicken Adobo | All-time favorite Filipino dish

Chicken adobo

I am asked plenty of times, “What is your favorite Filipino recipe?” And I always answer automatically, “Adobo.” (And when I say Adobo I mean the chicken version since I don’t eat four-legged animals.)

In the Philippines, this popular chicken stew dish is called “Adobong manok”. The main ingredients are vinegar, soy sauce and garlic. The rest of the ingredients vary depending on the region. I have developed my own version over time and would always serve it when I invite friends over for dinner or bring it to potluck parties and picnics. One of the reasons why I love it is because it can last forever for a long time without refrigeration since it is cooked in vinegar.

Best served with rice. Left-overs can be flaked and used as sandwich filling. Sarap! (translation: Yummy!)

    I have enjoyed Miss Dolly’s Chicken Adobo….and it is absolutely fabulous! Looking at her wonderful presentation and pictures makes me wish that she had again made it for her family here in Oregon…..
